Directions
1. Rinse the buckwheat under cold water in a fine-mesh sieve.
2. In a saucepan, bring 2 cups of water to a boil.
3. Add 1 cup of rinsed buckwheat to the boiling water and reduce heat to a simmer.
4. Cover and cook for 10-12 minutes, or until the water is absorbed and the buckwheat is tender.
5. Fluff with a fork and serve as a side dish, in salads, or as a base for stir-fries.
6. Store any leftover cooked buckwheat in an airtight container in the refrigerator for up to 4 days.
