Directions
Slowly add 1 cup polenta to 3 - 4 cups salted, boiling water while whisking to prevent lumps from forming. Reduce heat to a simmer for 5 - 10 minutes while stirring until it thickens and pulls away from the sides of the pot. The polenta should be soft and tender when done. It will thicken as it cools. If not served immediately, reheat thickened polenta over a low heat with a little added water to thin it.
