Oat and Date Cookies

Ingredients
200g oats
300g almond flour
1 tsp bicarb
180g butter
250g dates, pitted and finely chopped
200g raw almonds, macadamias and walnuts, chopped
100g unsweetened raw cranberries, raisins and goji berries
1/2 cup coconut flakes
4 extra large eggs, beaten
Method
1. Preheat the oven to 180°C.
2. Mix the oats, almond flour and bicarb together.
3. Rub the butter into the dry ingredients until the mixture forms crumbs.
4. Add the dates, nuts, berries and coconut flakes, and mix well.
5. Add the eggs and mix well.
6. Take spoonfuls of the mixture, roll into balls, flatten in your hands and place on a greased baking tray.
7. Bake for about 15 minutes, until slightly browned. Remove from the tray and allow to cool before serving.
