Baked Salmon

Ingredients
2 x 250g salmon steaks
Smoked sea salt and freshly ground black pepper
2 pieces of parchment, 40 x 40 cm
250g cherry tomatoes
1 small onion, halved and sliced
1 yellow pepper, sliced
30ml chopped fresh dill
30ml melted butter
1 lime, halved
Method
1. Preheat the oven to 200°C.
2. Season the salmon steaks with smoked sea salt and freshly ground black pepper.
3. Place the tomatoes, sliced onion, and yellow pepper on the parchment paper.
4. Top the vegetables with the seasoned salmon steaks.
5. Sprinkle with chopped fresh dill and drizzle with melted butter.
6. Squeeze half of the lime over the salmon and vegetables.
7. Fold the parchment paper into a tight pouch, sealing the contents inside.
8. Place the pouches on a baking sheet and bake for 15–20 minutes, or until the salmon is cooked through.
9. Carefully open the pouches, being mindful of the steam. Serve immediately with the remaining lime half.
