A bowl of hot, comforting soup is like a ray of sunshine on a rainy day. When the weather is grey and gloomy, I find myself instinctively gravitating towards soup, because cloudy skies equal soup weather, after all. There’s no soup that is more of a crowd pleaser than pumpkin. It’s the combination of the pumpkin’s natural sweetness and the soup’s creamy texture that makes it so comforting. Roasting the pumpkin brings out the nuttiness and intensifies its flavour. I love adding some warming spices to it, just to make it extra special.
